The recipes in this blog are devoted to those who seek new ways to save time, money, and labor in the kitchen with gourmet results.
A Food Service Representative once told me on one of his many visits to my restaurant that I had proven it is possible to operate a restaurant kitchen almost entirely on microwaves. I routinely used one standard oven and five “micros” to simultaneously crank out five gourmet meals in a matter of minutes.
I learned how to do this after much experimentation, due to my lack of a stove. As I experimented and patiently pushed the envelope of cooking methods, the microwave became a friendly and amazing tool. It yielded an unexpected capacity for cooking quickly, while producing meals on par with those at the finest restaurants.
It became blatantly clear to me that the micro is too often relegated to a minor re-heating role in the periphery of the kitchen, and can do much more.
When paired with a traditional oven; “micros” can be used to produce quick, planned meals for an entire week. They can also be used to selectively cook great individual entrees from fresh raw ingredients, with speed and ease, proving their virtue as a stand-alone cooking tool.
In our restaurant we were able to continually prep, cook, plate, and serve, five to eight delectable microwavable entrees at a time; in five minutes or less, using one standard oven and five microwaves.
In a home, two small microwaves or one large one is enough to crank out four entrees in about ten minutes. In a large restaurant you might want ten small microwaves to plate ten entrees at once within five minutes. If this seems strange, then you’re simply feeling the uneasy pangs of taking a break from the tradition of the stovetop.
